Banana Egg Pancakes

This is a Sunday morning favorite for me. I get up extra early to make this ‘sweet’ breakfast for myself before the hustle and bustle of Sunday morning activities start. I pair it with a berry mix and sit in a quiet kitchen or on a quiet deck and just savor it.

Ingredients:
One very ripe, medium banana (think mostly brown)
Two eggs
1 tsp of vanilla
1 tsp of cinnamon (I use a bit more, but I really like cinnamon)
Small pat of Earth Balance (or real butter if you can have cow daiOncry)

Mix and beat vanilla, eggs and cinnamon in one bowl. In another bowl finely mash banana. It is important to keep the beating and mashing in separate bowls. I’ve tried to do it all together in one bowl and the pancake never turns out the right way.  Once both steps are completed then mix the bowls together and mash the banana a bit more. Grease skillet with Earth Balance and cook over medium heat. Have patience and don’t rush it. It should flip just like a pancake, but if it still has too much liquid just take your spatula and push it back gently to let the liquid egg move to the side of the pan to cook longer. Flip and cook on the other side for a few minutes. Serve this high-protein breakfast with a little bit of real maple syrup or honey or even a tablespoon of almond butter. Healthy/happy eating!
