Mexican Crockpot Chicken Recipe
This is a great, healthy recipe if you’re short on time, need to feed a family with diverse wants and/or need to stretch a meal. Replace your regular “Taco Tuesday” night with this healthier version that everyone will love!
Ingredients: (choose organic when possible)
– 3-4 chicken breasts
– One jar of your favorite red salsa or homemade salsa
– One packet of taco seasoning mix or homemade taco seasoning mix (we opt for Trader Joe’s taco seasoning mix)
Clean and place chicken breasts in a crockpot with 1/2 jar of salsa and 1/2 packet of seasoning mix. Cook on low for 4-5 hours. Shred chicken with a knife and fork; add the rest of salsa and the rest of the taco seasoning. Cook for another hour. You can serve this on organic, stone ground corn taco shells or use it top a salad with romaine lettuce, cucumbers, tomatoes, black olives, banana peppers– whatever you like! The juice from the salsa acts as a nice salad dressing! Leftovers are wonderful too. Happy and healthy eating!
